BBQ BEANS 
2 lbs. pinto or kidney beans
1 env. chili mix (Carol Shelby brand)
1 med. onion, diced
2 cloves garlic, minced
1/2 lb. bacon, diced
1/2 lb. ground beef
1/2 tbsp. pepper
4 tbsp. salt
1/2 tsp. oregano
1 1/2 c. tomato juice

Cover beans with water, bring to boil and add salt and pepper. Turn heat to simmer and cook 2 hours or until tender. (Beans may be soaked to reduce cooking time). Saute bacon, onion, garlic, seasonings, chili mix, tomato juice and ground beef. Add mixture to beans and simmer one hour (10-16 servings).

Adding salt to beans before thay are thoroughly soaked & cooked will toughen the skins. Bean skins will remain tough no matter how long you cook them.
