STIR-FRY TURKEY FAJITAS 
4 (10 inch) flour tortillas
1/4 c. sodium reduced soy sauce
2 tbsp. sugar
2 tbsp. lemon juice
1 tbsp. cornstarch
1/4 tsp. crushed red pepper
1 med. chopped
3 med. green, red or yellow peppers, cut in thin strips
3 cloves minced garlic
1 tbsp. olive oil
12 oz. skinned, boned turkey breasts, cut in thin strips

Wrap tortillas in foil; warm in 300 degree oven.

Combine soy sauce, sugar, lemon juice, cornstarch and crushed pepper. Spray skillet with nonstick spray. Stir fry onion, sweet peppers and garlic in skillet over medium heat 3 to 4 minutes. Remove from skillet.

Add oil to skillet. Stir fry turkey over medium high heat 3 to 4 minutes or until no longer pink. Add soy sauce mixture. Cook and stir until bubbly. Add sweet pepper mixture; heat through. Spoon onto tortillas; roll up. Serves 4. (322 calories; 6 g. fat; 53 mg. cholesterol)
