STIR-FRY TURKEY FAJITAS 
4 (10 inch) flour tortillas
1/4 c. soy sauce
2 tbsp. lemon juice
1 tbsp. cornstarch
1/4 tsp. crushed red pepper
1 med. onion, chopped
3 med. green, red or yellow sweet peppers, cut into thin strips
3 cloves garlic, minced
1 tbsp. olive oil
12 oz. skinned, boned turkey breast, cut into thin strips

Wrap tortillas in foil; warm in 300 degree oven.

Combine soy sauce, sugar, lemon juice, cornstarch and crushed pepper. Spray skillet with non-stick spray coating. Stir-fry onion, sweet peppers and garlic in skillet over medium heat 5 minutes. Remove from skillet.

Add oil to skillet. Stir-fry turkey over medium high heat until no longer pink. Add soy sauce mixture. Cook and stir until bubbly. Add sweet pepper mixture; heat through. Spoon into tortillas; roll up. Serves 4.
