BANANA SPICE COOKIES | |
1/4 c. shortening 1/4 c. butter 1 c. brown sugar 2 eggs 1 c. mashed bananas 2 c. flour 2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. cloves 1/2 c. chopped nuts Combine shortening, butter, sugar, eggs, and bananas and set aside. Combine flour, baking powder, baking soda, salt, cinnamon, cloves and nuts. Add dry ingredients to banana mixture. Chill at least 1 hour. Bake at 375 degrees for 8 to 10 minutes; very lightly greased cookie sheets, about a rounded teaspoonful (or more if larger cookie desired). Frost if desired, when cool. I always put a light frosting. You can use powdered sugar, milk and butter or your favorite frosting. The icing keeps them moist. |
