NATURAL ZUCCHINI MUFFINS | |
2 c. chopped zucchini 1 1/2 c. whole wheat flour 1 1/2 c. whole wheat pastry flour 1 c. canola oil 1 1/3 c. whole cane sugar 3 eggs 1 1/4 tsp. cinnamon 1 tsp. vanilla 1 1/2 tsp. molasses 1/2 tsp. baking powder 2/3-3/4 c. raw almonds Mix all ingredients together. Spoon into oiled muffin pan and fill to top. Bake in oven at 350 degrees for 25-30 minutes. |
