SWEET POTATO CASSEROLE 
4 or 5 sweet potatoes, cooked
3 red apples
1/3 c. brown sugar or honey
1/8 tsp. salt
1 tbsp. cider vinegar
1 tbsp. boiling water
2 tbsp. butter
3 slices bacon

Peel potatoes and cut into thick slices. Place one half in a buttered casserole. Slice apples, do not peel. Place half on potatoes. Mix sugar (or honey) with vinegar and water, pour half over the apples, dot with butter. Add remainder of potatoes, apples and sugar. Cut bacon strips crosswise and spread on top.

Bake in 350 to 375 degree oven for 45 minutes. Cover the casserole for first 15 minutes, remove for remaining 30 minutes.
