WILD RICE BREAD 
1/3 c. wild rice
1 pkg. dry yeast
2 1/2 c. water (rice water)
1/4 c. brown sugar
1/2 c. molasses
1 tbsp. salt
1/4 c. melted butter
1/4 c. potato flakes
7-8 c. flour

Wash rice in cold water; drain. Cover with water. Bring to a boil, then simmer 1 hour, or until done. Drain and save liquid.

Combine yeast with 1/4 cup lukewarm water and mix well. In large bowl, place yeast mixture, 2 1/4 cup water, brown sugar, molasses, salt, butter, and potato flakes. Add flour to make a dough that can be kneaded. Knead 5 minutes. Place in greased bowl and let rise 2 hours or until doubled in bulk. Punch down and let rise second time. Shape into 3 loaves. Let rise.

Bake at 375 degrees for 45-50 minutes. Remove from pans and brush tops with butter.
