RED VELVET CAKE 
1 1/2 c. sugar
2 eggs
2 c. flour
1 c. buttermilk
1 tbsp. vinegar
1/2 c. shortening
1 tsp. salt
1 tbsp. cocoa
2 oz. red cake coloring
1 tsp. vanilla
1 tsp. baking soda

Cream sugar and shortening together, then add eggs. Beat well. Stir flour, slat and cocoa together 3 times. Alternate to cream mixture with buttermilk. Add vanilla and red food coloring. Beat. Then fold in vinegar and soda. Do not beat after this. Bake in two 9 inch layer pans at 325 degrees for 30 to 40 minutes.

ICING:

1 c. milk
1/4 c. flour
1/4 tsp. salt
1 c. sugar
1 c. shortening (Crisco or butter)
2 tsp. vanilla
Coconut

Mix together milk, flour and salt. Cook slowly until thick. Cool thoroughly. Cream sugar and shortening until fluffy. Add cooked mixture and beat well. Ice cake. Sprinkle with coconut.
