PEPPERMINT ICE CREAM PIE 
1 Pet Ritz deep dish pie crust shell, baked
6 c. vanilla ice cream, softened
20 peppermint candies, finely crushed
6 drops red food coloring (optional)
Chocolate ice cream topping

In a large bowl, combine softened ice cream, crushed peppermints and food coloring. Spread ice cream mixture in prepared crust. Drizzle chocolate topping over ice cream. Freeze at least 2 hours or until ready to serve. Let stand 10 minutes before cutting. Makes 8 servings.
