JAPANESE FRUIT CAKE 
5 eggs
2 c. sugar
1 c. butter
1 c. milk
3 c. flour (self rising)
1 tsp. vanilla

SPICE LAYER:

1 tsp. cinnamon
1 tsp. ground cloves
1/2 box seedless raisins
1 1/2 c. nuts

Cream butter and sugar. Add eggs one at a time and beat well. Add flour a little at a time and pour in milk. Slowly add flavoring divide batter in half. For spice layers, add the spices, raisins and nuts to half the plain mixture. Alternate layers of yellow cake then spice, etc.

FILLING:

3 c. sugar
4 tbsp. butter
2 c. milk
2 to 3 lemons or more
1 1/2 pkg. angel flake coconut

Boil milk. Add one grated lemon and juice of two or more lemons. Add coconut and cook until clear. Put the fruit layer first, then filling, layer, filling, etc.
