GYROS 
2 lb. ground lamb
2 cloves garlic, crushed
1/4 c. lemon juice
1 tsp. basil
1/2 tsp. ground marjoram
1 tsp. thyme
1 tsp. rosemary
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. snipped parsley
8 pita packets
2 tomatoes, chopped
1 onion, chopped or sliced

Combine lamb, garlic, lemon juice, basil, marjoram, thyme, rosemary, salt, pepper and parsley in a large bowl. Blend well. Place in heated skillet. Cook over moderate heat, stirring constantly, until meat is brown. Drain off grease. Cut pita packets in half. Spoon in meat mixture. Top with tomatoes and onions. Spoon sauce over each sandwich.

Sauce:

2 cups plain yogurt or sour cream
1 medium cucumber, pureed
cloves
garlic, pressed
1/4 teaspoon salt
2 tablespoons sugar, optional

Combine 2 cups plain yogurt or sour cream (or 1 cup each), 1 medium cucumber which has been pureed in blender or processor and strained to remove liquid, cloves, pressed garlic and 1/4 teaspoon salt. (2 tablespoons sugar optional.)
