FATHER BOB'S NEW YORK JEWISH
CREAM CHEESE CAKE
 
3 lbs. cream cheese
1 1/2 c. sugar
Graham cracker crumbs
1 tsp. vanilla
1 tsp. lemon juice
Dash of salt
7 whole eggs
1 pt. heavy sweet cream

Grease 10 inch spring form pan, then sprinkle with graham cracker crumbs. Mix 3 pounds cream cheese with 1 1/2 cups sugar. Cream well. Add dash of salt, teaspoon of vanilla, teaspoon of lemon juice and cream again.

In another bowl beat 7 whole eggs, then add 1 pint of heavy sweet cream and beat again. Combine cheese mixture with egg mixture. Pour into spring pan. Cover bottom of a larger pan with 1/2 inch water, then place spring form pan right in the center. Bake at 375 degrees for 50 to 60 minutes or until golden brown.

This is really good! I don't buy cheesecakes because they are not the real mccoy! However, my husband grew up in Brooklyn, NY and gave this a thumb's up!
