SPINACH PIE | |
2 (10 oz.) pkgs. chopped spinach, thawed and drained 6 eggs, beaten (or equivalent "Egg Beaters", etc.) 1 c. milk 1/2 lb. feta cheese, crumbled 1/8 c. olive oil 1 tbsp. dill weed 2 med. onions, chopped Salt and pepper, to taste 1 lb. filo pastry sheets 1/2 c. olive oil 2 tbsp. cold water Saute onions and dill in 1/8 cup olive oil for 2-3 minutes, and cool. Beat eggs. Add milk, cheese, spinach and onion mixture to eggs. Cut filo in half to fit pan - wrap and set aside 1/2 half. In 9 x 13 inch cake pan layer first half of filo sheets brushing each sheet lightly with olive oil. Pour mixture on top of pastry. Continue layering with second half of pastry, again brushing each sheet with oil. Sprinkle with cold water and bake at 350 degrees for 40-50 minutes. Let it cool for 20 minutes, to set, before cutting. |
