DUTCH VEGETABLE WHIP 
Delicious served with pork instead of whipped potatoes. Recipe cooked in pressure cooker.

6 c. potatoes, diced
3 c. carrots, diced
2 apples, peeled and sliced
1 onion, sliced
1 tsp. salt
1/8 tsp. pepper
2 tbsp. butter in cooker water
1 tbsp. parsley, chopped

Prepare vegetables. Place all ingredients except butter and parsley on rack with water in cooker. Close cover securely. Place pressure regulator on vent pipe and cook 5 minutes with pressure regulator rocking slowly. Cool cooker at once. Drain vegetables and mash. Add butter and whip until fluffy. Garnish with parsley.
