BAKED FISH WITH THREE PEPPER
SAUCE
 
2 tbsp. olive oil
1 lg. garlic cloves, minced
1 c. thinly sliced onion
2/3 c. julienne sliced green peppers
2/3 c. julienne sliced yellow peppers
2/3 c. julienne sliced sweet red peppers
1 tsp. salt
2 tbsp. lemon juice
2 tbsp. dry white wine
1/2 tsp. turmeric
1 1/2 lbs. firm white fish

Preheat oven to 350 degrees. In a large saucepan, heat the olive oil and saute the garlic, onion, green and yellow peppers for 2 minutes. Add the red pepper and saute until the vegetables are limp, but not browned, about 3 minutes. Add the salt, lemon juice, wine, and turmeric. Saute for 2 minutes more. Remove the vegetables from the pan.

Arrange the fish in a single layer in a greased baking dish. Cover with the peppers. Bake for 10-12 minutes or until the fish is flaky. Serve at once.
