RAISIN OATMEAL CRISPIES 
3/4 c. shortening
1 c. brown sugar, firmly packed
1 egg
1 tsp. grated lemon rind
1 tsp. vanilla extract
1 c. sifted all-purpose flour
1 tsp. cinnamon
3/4 tsp. salt
1/2 tsp. baking powder
2 c. rolled oats
1/2 c. chopped nuts
3/4 c. seedless raisins or golden

Cream shortening and sugar together thoroughly. Blend in egg, rind and vanilla. Sift together flour, cinnamon, salt and baking powder. Stir flour mixture, oats, nuts and raisins into creamed mixture. Drop by teaspoonfuls into greased cookie sheet. Bake in moderate oven at 350 degrees for 10 to 12 minutes. Allow to cool a minute or two. Remove to wire rack to cool. Makes about 4 dozen cookies.
