SPANISH RICE 
1 qt. tomatoes
1 c. cooked rice
1/4 c. finely cut bacon
2 green peppers, chopped
1 lg. onion, chopped
1/2 stalk celery, cut fine

Fry bacon until somewhat brown. Drain somewhat. Add vegetables and fry slowly for 15 minutes. Stir in tomatoes, then vegetables. Stir well. Season. Bake slowly for 1/2 hour.
