CHICKEN PIZZAIOLA 
4 skinless, boned chicken breast halves
1 egg, well beaten
1/3 - 1/2 c. seasoned bread crumbs
2 tbsp. butter
1/4 c. ketchup
1/4 tsp. dried oregano
4 tsp. grated Parmesan cheese
4 slices Mozzarella cheese

Flatten chicken breast to 1/4". Dip in egg, then coat well with bread crumbs. Slowly saute chicken in butter until lightly browned. Combine ketchup and oregano. Top each chicken with 1 tablespoon ketchup mixture, 1 teaspoon grated Parmesan cheese and 1 slice Mozzarella. Cover. Heat until cheese is melted.
