CANNED FRUIT COBBLER | |
1/2 c. sugar 1 tbsp. cornstarch 2 1/2 c. (#2 can) canned fruit or berries & juice (use cherries, peaches, apricots or blackberries, etc.) Butter Cinnamon 1 c. sifted flour 1 tbsp. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 3 tbsp. shortening 1/2 c. milk Mix 1/2 cup sugar and cornstarch in saucepan. Stir in gradually 2 1/2 cups fruit and juice. Bring to boil and boil 1 minute, stirring constantly. Pour into 1 1/2 quart baking dish and dot with butter. Sprinkle with cinnamon. Sift together flour, 1 tablespoon sugar, baking powder and salt. Cut in shortening with pastry blender until mixture looks like meal. Stir in milk. Drop by spoonfuls onto hot fruit mixture. Bake at 400 degrees until golden brown (25-30 minutes). |
