HORTOSOUPA (Garden Vegetable
Soup)
 
2 qt. water
2 carrots, chopped
2 stalks celery, chopped
2 onions, chopped
2 tomatoes, peeled & crushed
1/2 c. peas
1/2 c. string beans, cut 2"
Salt & pepper to taste
1/2 tsp. thyme
1/4 tsp. sage
1/2 c. orzo
2 zucchini, cubed
1/2 c. grated Krinos Kefalotyri cheese

In a large kettle, boil water. Combine all ingredients except zucchini, orzo and cheese. Cook for 20 minutes, over low heat. Add orzo and cook for 10 additional minutes. Add zucchini and cook until tender. Sprinkle with cheese. Serves 8. Variation: Substitute beef or chicken stock for water.
