SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
1/3 c. butter
1 tsp. vanilla
2 eggs

TOPPING:

1 c. coconut
1 c. chopped nuts
1 c. brown sugar
1/3 c. flour

Combine sweet potatoes ingredients and pour into buttered dish. Combine topping ingredients and sprinkle with melted butter. Bake at 375 degrees until topping melts and is brown.
