CURRIED CHICKEN-CANTALOUPE SALAD 
1 med. cantaloupe
1/3 c. mayonnaise
1/4 c. plain lowfat yogurt
3/4 tsp. garlic salt
1/2 tsp. curry powder
1/4 tsp. ground ginger
4 hard-boiled eggs
1 c. (4 oz.) diced cooked chicken
1/3 c. chopped green onions with tops
1/4 c. chopped green and/or sweet red pepper

Dice cantaloupe to make 1 cup; set aside. In medium bowl, blend mayonnaise, yogurt and seasonings. Add eggs, chicken, cantaloupe, onion and peppers and mix until evenly cooled. Cover and chill. Garnish with cantaloupe slices, thin slices of peppers and egg wedges, if desired.
