CURRIED CHICKEN SALAD 
3 whole chicken breasts
1/4 c. raisins
1/4 c. walnuts

Dressing:
1 c. mayonnaise
1/4 tsp. ginger
1 tsp. curry powder
1 clove garlic (minced)
1 tbsp. honey
1 tbsp. fresh lemon or lime juice
1 tbsp. chutney

Cook chicken breasts in water until done, about 1/2 hour, drain and let cool. When cool enough to handle, remove skin and bone and discard. Chop meat into bite size pieces and set aside.

To make dressing, stir together all ingredients. Add raisins, walnuts and dressing to chicken, mix well and chill.

Note: You may substitute leftover cooked chicken or turkey.
