BAKED CREAM POTATOES 
1 med. onion, chopped
3 tbsp. chopped green peppers
4 tbsp. butter
1 tbsp. chopped pimento
2 1/2 tbsp. flour
2 c. milk
Salt and pepper to taste
3 c. cubed cooked potatoes
3/4 c. shredded Cheddar cheese

Cook onion and green pepper in butter about 5 minutes. Stir in pimento and flour. Add milk gradually, stir and cook until thick. Season to taste, add potatoes, pour into casserole, top with cheese and bake at 350 degrees for 30 minutes uncovered.
