SPINACH SOUFFLE 
2 pkg. frozen spinach, let come to boil, drain
4 eggs
1/2 c. milk
1 sm. onion, chopped

Chop spinach. Beat eggs and milk. Mix chopped spinach, onion, 1 cup Velveeta cheese, salt and pepper with egg mixture. Pour into buttered baking dish. Cover with buttered croutons. Bake at 350 degrees for about 30 minutes or until set.
