VEGETABLE SANDWICHES 
8 oz. cream cheese
2 carrots
1 med. bell pepper
1 cucumber
1 celery stalk
1 sm. onion
Mayonnaise
1/2 tsp. salt
Dash of horseradish, if desired

Allow cream cheese to come to room temperature. Grate vegetables on fine side of grater and drain. Mix vegetables with cheese. Add enough mayonnaise to make mixture a spreading consistency.

Just before making sandwiches add salt (and horseradish if desired). Makes 3-4 dozen party sandwiches.
