FRESH FRUIT GELATIN SALAD 
1 env. unflavored gelatin
1/2 c. cold water
3 tbsp. honey
1 1/4 c. fruit juice (except pineapple)
1 1/2 c. diced fresh fruit (except pineapple)

Sprinkle gelatin over cold water in small saucepan. Place over low heat, stirring constantly until gelatin dissolves, about 3 minutes. Add honey and fruit juice and chill until partially set. Add fresh fruit and chill until firm. Serves 4.
