VEGETABLE SOUP 
2 tbsp. oil
1 med. onion, cut coarse
2 cloves garlic, chopped
1 can tomatoes
4 c. water
1 med. zucchini, sliced
1 tsp. oregano
1/2 tsp. thyme
1/4 tsp. pepper
1 can kidney beans, drained
1 c. uncooked spiral pasta
Parmesan cheese

Saute onion and garlic. Add tomatoes, water, oregano, thyme, and pepper; bring to boil. Add pasta and beans. Boil 4 minutes. Add zucchini last. Boil 2 minutes. Sprinkle with cheese.
