1/3 c. powdered sugar 1/3 c. butter, softened 3/4 c. all-purpose or whole wheat flour 1 egg 1/2 c. packed brown sugar 1 tbsp. all-purpose flour 1/4 tsp. baking powder 1/4 tsp. salt 1/4 tsp. vanilla 1/4 c. chopped walnuts 1/4 c. flaked coconut Orange Frosting Mix powdered sugar and butter. Stir in 3/4 cup flour. Press firmly and evenly in baking dish, 8 x 8 x 2 inches. Elevate baking dish on inverted dinner plate in microwave. Microwave, uncovered, on medium (50%) 2 minutes; rotate baking dish 1/4 turn. Microwave until mixture appears almost dry, 2 to 4 minutes longer. Mix remaining ingredients, except Orange Frosting. Spread over cooked layer. Microwave (do not elevate), uncovered, on medium (50%) 3 minutes; rotate baking dish 1/4 turn. Microwave until filling is set, 3 to 5 minutes longer. Let cool on heat-proof surface (do not use rack). Frost with Orange Frosting. Cut into bars, about 2 x 1 1/4 inches. Orange Frosting: Place 1 tablespoon butter in 2 cup measure. Microwave, uncovered, until melted (about 15 minutes). Add 1 cup powdered sugar, 1 tablespoon orange juice, and 1 teaspoon lemon juice; mix until smooth. Pecan Chews: Substitute 1/2 cup chopped pecans for the walnuts and coconut. |
