HARVARD BEETS 
1/2 cup sugar
1 1/2 tsp. cornstarch
1/4 cup water
1/4 cup vinegar
12 small beets
2 tbsp. butter

Mix in a sauce pan sugar, cornstarch, water and vinegar. Boil 5 minutes. Add beets and let stand at least 30 minutes or more. Just before serving bring to boiling point and add 2 Tbsp. butter.
