SCALLOPED POTATOES 
1/4 c. butter
3 tbsp. all-purpose flour
2 tsp. chopped chives, divided
1 tsp. salt
1/2 tsp. dry mustard
1/8 tsp. pepper
1 3/4 c. milk
4 med. potatoes, sliced and peeled

Microwave butter in 2-quart casserole at high 45 seconds to 1 1/4 minutes or until melted. Stir in flour, 1 teaspoon chives, salt, dry mustard and pepper. Blend in milk. Microwave at high 5 to 7 minutes or until thickened, stirring every other minute.

Mix in potatoes. Cover. Microwave at high 15 to 20 minutes or until potatoes are tender, stirring 2 or 3 times. Add remaining 1 teaspoon chives for decoration. 4-6 servings.

VARIATION: SCALLOPED POTATOES AU GRATIN:

Add 3/4 to 1 cup grated cheese to sauce. Stir until melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
