CURRIED RICE SALAD 
1 pkg. chicken Rice-A-Roni
4 green onions, chopped
1/2 green pepper, chopped
6 stuffed green olives, chopped
1 (6 oz.) jar marinated artichoke hearts, drained & saved
1/2 c. mayonnaise
3/4 tsp. curry powder

Prepare rice as per box. Cool rice, add onions, green pepper, olives and artichokes, chopped; mix well. Make dressing with artichoke juice, mayonnaise and curry powder. Mix all together with rice mixture. Refrigerate.
