PAULINE'S CURRIED RICE SALAD 
2 (6 oz.) jars artichoke hearts, marinated
1 pkg. rice mix, chicken flavor
1/3 c. green onions, sliced
1/2 c. green peppers, chopped
1/2 c. pimento-stuffed olives
1/3 c. mayonnaise
1 tsp. curry powder

Cook and cool rice. Add onions, peppers and olives. Drain artichoke hearts, reserving marinade and add to mixture. Mix mayonnaise with curry powder and enough of the marinade to give a good consistency. Blend with rice mixture and chill.

NOTE: For a main dish, add 1 to cups chicken chunks. Serves 6 to 8.
