PORK CHOPS AND RICE 
8 med. pork chops
1 1/2 c. rice
1 lg. onion, diced
2 c. sliced celery
1 lg. green pepper, chopped
3 to 4 c. chicken stock or 3 heaping tsp. Spice Island chicken stock base diluted in 3-4 c. water
8 thin slices onion
8 slices tomatoes
Salt and pepper

Brown chops - put aside.

Saute sliced onion, celery and green pepper; remove and set aside.

Brown rice in the same pan (add more shortening if necessary). Mix vegetables and rice. Place in Nesco or covered roaster. Float chops on top. Put a slice of onion on each chop. Cover, bake 350 degrees. When almost done, add a tomato slice on each chop.
