BREAKFAST MUFFINS 
Serves: 12:

This recipe is good for Diabetics or people with high cholesterol.

1 c. Kellogg's Nutra Grain Almond Raisin cereal
2/3 c. 1% milk
1 lg. egg OR
1/4 c. egg substitute
1 tbsp. light mayonnaise
2 tbsp. cooking oil
1/3 c. sugar
3 heaping tbsp. apricot Simply Fruit
2 c. self-rising flour

Put cereal and milk in bowl. Set aside. Whip egg, mayonnaise and oil until well blended. Add sugar and cereal mixture, blend well. Add flour and blend until all moist. Measure into 12 paper lined cup cake pan. Bake 15 - 18 minutes in 400 degree oven.

NOTE: Post Great Grains Raisin-Date-Pecan can be substituted for Kellogg's cereal.
