HOT CHICKEN SALAD | |
3 c. toasted bread cubes or croutons (1 - 6 oz. box) 6 c. diced, cooked chicken (about 8 breasts) 4 1/4 c. grated sharp cheese 1 c. slivered almonds 6 c. diced celery 3 tbsp. grated onion 6 tbsp. lemon juice 1 tsp. salt 1/2 tsp. pepper 2 1/2 c. mayonnaise 1 (5 oz.) pkg. potato chips, crushed Or 1 cup grated cheese mixed with 3 cups croutons. Combine all ingredients except the last one; mix well. Pour into large pan (about 13"x9") and top with potato chips or cheese croutons. Bake at 350 degrees for 25 minutes. Serves 15 to 20 people. |
