SOFT GINGER COOKIES 
1 c. shortening or 1 1/4 c. vegetable oil
1 c. sugar
2 c. light molasses
1 c. sour milk
2 eggs
1 tbsp. ginger
1 tbsp. cinnamon
5 tsp. baking soda (2 in milk, 3 in flour)
1/2 tsp. salt

Mix in 7-8 cups of flour or until stiff enough to roll. Can be frosted with powdered sugar icing if desired.
