MEXICAN MEAT LOAF 
1 onion, diced
1 bell pepper, diced
1 c. chopped celery
2 lbs. ground beef
2 sm. cans taco sauce
1 can cream of chicken soup
1 can mushroom soup
1 can chopped green chilies
1 can tomato paste
1 minced garlic clove
1 pkg. flour tortillas
1 lb. grated cheese
Salt and pepper to taste
1/2 tsp. chopped Jalapeno pepper (optional)

Brown onions, pepper, celery and beef in heavy skillet. Remove to deep pot. Add remaining ingredients, except tortillas and cheese. Bring to boil. Line baking dish with tortillas, then a layer of meat mixture, then sprinkle with cheese. Repeat until all mixture is used. Top with cheese and bake at 350 degrees 35 minutes. You can add 1/2 teaspoon chopped Jalapeno.
