PEANUT BRITTLE 
2 c. sugar
1 c. dark corn syrup
1/2 c. water
1 tsp. salt
2 tbsp. butter
2 1/2 c. raw peanuts
2 tsp. vanilla
1 1/2 tsp. baking soda

Mix first 4 ingredients and bring to a boil. Cover and boil for 3 minutes. Remove cover and boil to hard stage, then add butter and nuts. Cook slowly to hard crack stage, or until nuts are done. Then stir in soda and vanilla quickly. Quickly pour on greased platters. Let stand 1 minute, then peel from edges and turn back. When hard, break into pieces.
