DATE-NUT MUFFINS 
1 c. chopped dates
1 c. chopped walnuts
1 c. boiling water
2 tbsp. butter
1 beaten egg
1 tsp. vanilla
1 3/4 c. flour
1 c. sugar
1 tsp. baking soda

Combine dates, water and butter; set aside and let cool.

Add sugar, egg and walnuts to the date mixture. Blend in the flour, soda and vanilla.

Fill cupcake holders about 2/3 full. Bake in 375 degree oven for 20 to 25 minutes.
