ZUCCHINI BREAD | |
3 lg. eggs 2 c. sugar 3 c. flour 1 tsp. salt 1 tsp. cinnamon 1 tsp. baking soda 1 tsp. baking powder 1 1/2 c. chopped nuts 1 1/2 c. coconut 1 c. salad oil 3 c. grated raw zucchini 2 tsp. vanilla Combine all ingredients in mixing bowl. Mix well. Bake at 325-350 degrees for 1 hour 15 minutes or until done. Use greased 9x5 loaf pans. Makes 2 loaves. |
