ORANGE-DATE-NUT CAKE | |
2 sticks butter 4 eggs 1 tsp. baking soda 3 tbsp. grated orange rind 1 c. broken pecans 2 c. sugar 1 1/3 c. buttermilk 4 c. plain flour, sift twice 1 lb. chopped dates Cream butter and sugar; beat in eggs one at a time. Dissolve soda in buttermilk. Add flour and milk alternately; beat until smooth. Add orange rind, dates and nuts. Pour into greased and floured tube pan. Bake at 325 degrees for 90 minutes. While it is still hot and still in the pan, pour glaze evenly over the top. Allow to cool in the pan. GLAZE: 1 c. strained orange juice 3 tbsp. grated orange rind 2 c. sugar |
