HOMEMADE PANCAKES | |
2 1/2 c. flour 5 tsp. baking powder 4 to 6 tbsp. sugar 1/2 tsp. salt 2 eggs 2 1/2 c. milk 6 tbsp. melted butter or oil 1. Mix dry ingredients all together. 2. Beat eggs well, add milk and oil. Slowly stir flour mixture, mixing only until dry ingredients are wet. 3. When griddle is hot enough to make a drop of cold water dance lightly grease griddle. 4. Drop batter from large spoon onto griddle about 4 inches in diameter. Cook over low heat until rim of each cake is full of broken bubbles and underside is golden brown. With broad spatula, loosen and turn each cake, brown on other side. Turn only once. Serve at once with butter and syrup. Makes 25 (4 inch) cakes. |
