ENCHILADA LAYER PIE 
1 lb. ground beef
1 med. onion
1 clove garlic
2 tsp. butter
1 tsp. salt
1/4 tsp. pepper
1 tbsp. chili powder or more
1 tsp. cumin
1 can refried beans
1 (4 1/2 oz.) can chopped ripe olives
1 can tomatoes
8 tortillas, buttered
2 c. grated cheese
1/2 c. water

Saute beef, onion and garlic in butter. Add seasonings, beans, olives, tomato sauce. In a casserole baking dish, alternate layers of buttered tortillas, meat sauce, 1 1/2 cups cheese. Sprinkle rest of cheese on top. Pour water at edge. Bake at 400 degrees for 30 minutes.
