VEAL FLORENTINE (VITELLO ALLA
FLORENTINA)
 
2 lb. (1 pkg.) veal steak, cubed
1 onion, sliced
1/4 c. (62.5 ml.) olive oil
1 clove garlic, crushed
1/2 lb. (250 g.) tomatoes, peeled
Pinch of rosemary
1/4 c. (62.5 ml.) dry white wine
Salt and pepper

Saute the onion in the oil for about 2 minutes. Add the garlic and cook for another minute. Add meat and brown well on all sides. Add tomatoes, rosemary, wine and salt and pepper, to taste. Cover and cook over a low heat for about 30 minutes or until meat is tender. Stir occasionally. Serves 6.
