CHICKEN STEW FOR RIGHT BRAIN

Can serve 2 to 4, depending on how much chicken and veggies you have.

In a large pot with a lid put 6 to 8 cups water; add the following ingredients, preferably the freshest; organic brown rice (one handful), 3 to 4 medium sized red potatoes, 1/2 to 1 chicken, cut up, taking the skin off all parts except one or two (for a little flavor), one large onion cut in fourths, 1 large fresh clove of garlic, sliced, several of those humongous organic carrots, sliced your favorite way, a few tomatoes, quartered and any other fresh organic veggie you like (corn, broccoli, celery, zucchini). If you remember to cut the little leaves off the celery and let them dry you'll always have celery flavor without having to buy a bunch.

Put the lid on and simmer this for about an hour, stirring once in a while over medium to low heat. Throw a few pieces of basil, maybe rosemary too, in there. At the end layer the top with fresh spinach leaves until cooked just a little. Can do this in crock pot too. Salt and pepper when done.
