REAL RED VELVET CAKE 
1 tsp. baking soda mixed with 1 tsp. vinegar
1 c. butter
1 1/2 c. sugar
2 eggs
2 1/2 c. all-purpose flour
2 tbsp. cocoa
1 c. buttermilk
1 tsp. vanilla extract
2 oz. red food coloring

Cream butter and sugar together. Add eggs, one at a time, beating well after each addition. Add flour, cocoa and milk alternately. Add soda mixture, extract and food coloring. Pour into 3 greased and floured 8-inch pans. Bake at 350 degrees for 25 to 30 minutes.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese
1 stick butter, softened
1 tsp. vanilla extract
1 box 4X sugar
1 c. nuts

Beat cream cheese, sugar and butter until fluffy and vanilla and nuts. Mix well. Spread between layers, sides and top of cake.
