SWISS STEAK 
4 cube steaks
2 tbsp. flour
2 tbsp. butter
1 can (10 1/2 oz.) tomato juice
1 onion, sliced
3 med. carrots, sliced 1/4 inch
2 ribs celery, cut to 1/2 inch
1 tsp. sugar
Salt
Pepper

Dip steaks in flour, brown in butter. Pour tomato juice over meat and add hot water to cover. Add sliced onion. Simmer 1 hour, adding water as needed. Add carrots and celery. Season with sugar, salt and pepper. Cook until vegetables are tender.
