QUICK LEFTOVER POTATO TRICK 
Many Many homemakers cook extra mashed potatoes so there are leftovers for the next day. Its no trick to turn them into fluffy little potato patties.

Shape them and brush with a beaten egg yolk. Sprinkle with paprika and place on a greased baking sheet. Bake at 375 degrees until well heated.

Shape patties and flour both sides. Fry in butter until golden brown.
