HUNGARIAN GOULASH 
1 lb. beef chuck
1 tbsp. salt
1 med. onion, chopped
2 tbsp. shortening
1 tsp. paprika
3 med. carrots
Parsley
1 qt. water
4 med. potatoes
1/4 tsp. black pepper

Cut beef into 1 inch cubes, add 1 1/2 teaspoons salt. Brown onions in shortening, add paprika and beef. Let beef simmer in own juice for 1 hour. Add sliced carrots and parsley roots. Simmer for 1 1/2 hours. Add water, diced potatoes and remaining 1/2 teaspoon salt. Simmer until potatoes are tender.
